If you have a little spare time in the evening, this crazy-amazing dessert will seriously hit the spot! The mouthwatering layers of graham crackers, vanilla pudding, whipped cream, and gooey chocolate make this eclair cake one of a kind and dangerously irresistible. The biggest downfall of this dessert? The waiting game.

INGREDIENTS:
For The Filling:
1 3/4 c. whipping cream
2 boxes instant vanilla pudding
3 c. milk
1 box graham crackers (3 sleeves)
For The Topping:
1/3 c. cocoa powder
1 c. sugar
1/4 c. milk
1/2 c. butter
1 tsp. vanilla extract
DIRECTIONS:
Cover the entire bottom of a 9x13 dish with one layer of graham crackers. In a medium bowl, add the whipping cream. Beat on medium-high speed for approximately four minutes until it turns into whipped cream. In a large bowl, add 3 c. of milk and the 2 boxes of vanilla pudding. Beat on medium speed for about two minutes. Stir the whipped cream mixture into the pudding mixture and blend until well-combined.
Add half of the pudding mixture over the bottom graham cracker layer. Use a spatula to spread it out evenly. Repeat with another layer of graham crackers and the rest of the pudding mixture. Add the final layer of graham crackers on top.
In a small pot, add the cocoa powder, milk, and sugar. Bring to a full, rolling boil. Boil for one minute, stirring constantly. Remove the pot from heat and let cool for one minute, continuing to stir.
Add the butter and vanilla, stirring until it is melted and has formed a smooth, chocolate glaze. Immediately pour over the top layer of the graham crackers. It will spread out on its own but tilt the dish as needed so the entire top is covered. Refrigerate overnight. Enjoy!
