INGREDIENTS:
For Donut:
1 1/2 c. all-purpose flour
1/2 c. unsweetened cocoa powder
2 tsp. instant espresso powder
3/4 c. granulated sugar
2 tsp. baking powder
1 tsp. salt
1/2 c. unsalted butter, melted
2 large eggs
3/4 c. whole milk
1 tsp. vanilla extract
4 oz. chopped chocolate
mini chocolate chips, for decorating
For Ganache:
1/2 c. heavy cream
8 oz. chocolate, chopped
1 tbsp. unsalted butter
DIRECTIONS:
Preheat oven to 375 degrees and grease bundt pan with non-stick spray.
In a bowl, mix flour, cocoa powder, espresso powder, sugar, baking powder, and salt. In a separate bowl, mix butter, eggs, milk, and vanilla. Working in thirds, mix your dry ingredients into your wet ingredients until fully combined.
Fold in chocolate and then pour the batter into your pan. Tap lightly to get rid of any air bubbles and then bake for about 40 minutes, or until a toothpick inserted comes out clean.
To make the ganache: In a saucepan, heat heavy cream until small bubbles form. Remove from heat; add chocolate and butter and let set for a couple of minutes. Mix together until smooth.
Drizzle on top of cooled donut and garnish with mini chocolate chips.
